Looking Forward to Leftovers


Tonight we are having leftovers and I am thrilled! The etouffee recipe we prepared on Tuesday made 8 servings, so we had plenty left. We are traveling this weekend and did not want it to go to waste, so tonight is shrimp etouffee and salad. This has been my fave dish so far and I am glad we get to enjoy it again!

We are heading to the Delta to see our parents and will be taking all of our recipes and ingredients with us. Let's see if we can make it through a weekend with our folks without cheating. This will be a real challenge!

Tonight we mixed up the filling for the Broccoli Lasagna Spirals we will have tomorrow night.
