This recipe was great! So great that I forgot to take a picture of it, before we had eaten it all. After two nights of salad in a row, this was a nice change. Not that the salads were bad, but it was nice to have a warm meal again. We travelled to Mississippi this weekend to see family, so we actually prepared this Friday night and then had it for lunch (and dinner) on Saturday. I've had spaghetti squash a couple times before and really enjoyed it. It's nice to find a new way to prepare it.
It's getting easier and easier to turn down foods that I normally would have a hard time resisting. Our parents are constantly offering up cookies, pies, donuts, ice cream, and other things I know my body doesn't need. It used to be difficult to resist this kind of stuff, but now that I've been committed to eating healthy, whole food for five weeks now, those sorts of things don't even sound good any more.

Mediterranean Salad
Just like I wasn't looking forward to last nights salad, Carmen wasn't looking forward to tonights. And just like, I ended up liking the Winter Salad, she liked the Mediterranean Salad,
The salad was really good, but we'll make a few adjustments next time we have it. We were out of bread so we didn't have the croutons that were supposed to go with it. We also used grated parmesan cheese when we should have used fresh parmesan cheese. I think that would have made a huge difference. The canned salmon also had bones in it, which were a pain to remove. I didn't realize it wasn't boneless when I bought it, but I will definitely pay more attention next time! I also think it would be good to add some kalamata olives to the salad.

Winter Salad
I'll be honest, I wasn't really looking forward to this recipe. I'm not a big fan of raw mushrooms and it just seemed so plain. However, it turned out to be really good. The fresh fennel and the homemade dressing gave it a really unique and refreshing taste. It was a nice change from some of the heavier meals we have been having. I would definitely make this again...and look forward to having it.

Coconut Tilapia
This recipe has been one of my favorites! I cook fish quite often, but always end up preparing it the same way. It was nice to learn a new way to prepare it that is still simple and delicious. It had very sweet taste with a hint of spiciness. Next time I make it, I think I'll add a little cayenne pepper to give it a little more kick. We served it with some of last night's leftover fruit salad. They went together perfectly.

Honey Glazed Fruit Salad
Today's recipe was for Honey Glazed Fruit Salad. It was super easy to prepare. We just had to chop some fruit and pour honey, lemon juice, and orange juice over it. It turned out delicious and refreshing. I ate a small serving right after I made it and then later for dinner we had it as a side to some bean and cheese burritos. It made for a very light, yet filling dinner.

Another Monday, Another Soup
As has been the case for the past few weeks, Monday nights are soup night. Tonight we made a very good Butternut Squash soup. The recipe was easy enough to make, but did require a little time to roast the squash before mixing everything up. It turned out to have a very sweet taste to it.

Quick Marinated Shrimp & Pasta
This was another great recipe that we will be using more! We often have shrimp in our freezer (we get it from family in Louisiana), so it is nice to find new ways to prepare it. Especially ways that are quick and delicious! We were supposed to let this chill in the fridge for a couple of hours, but we were hungry and it smelled so good that we just ate it warm...which was great. We'll just have the leftovers cold and get to decide which way is better.
This recipe was also great, because it was a good way to get some carbs and proteins before my run. I'm up to 4.5 miles and feeling great. My goal for our next 5k is to break 30 minutes and would love to be closer to a 9 minute per mile pace for a 27 minute time.
